Homemade pimento & cheese

A few days ago we attended a keto mixer and everyone brought a keto-friendly snack.  Elise brought a bowl of Grandma Parker’s Homemade pimento and cheese (with a personal little twist or two) and it was a hit!

The secret ingredients – use chopped pimento-stuffed olives instead of pimentos and liberal garlic and cayenne!

Grandma Parker’s Pimento & Cheese


  • 2 cups shredded cheese.  The sharper the better.  One trick that really makes a fantastic pimento & cheese is to use half shredded sharp cheddar and half shredded parmesan.
  • 1 block cream cheese
  • 1 large jar of pimentos or an equivalent amount of chopped pimento-stuffed olives.
  • Garlic powder to taste
  • Cayenne pepper to taste
  • Mayonaise to taste – Another yummo trick is to use tabasco mayo or sriracha mayo for a little extra twang and kick.

Soften the cream cheese.  Stir in pimentos or olives. Add garlic and cayenne to taste.  Stir in cheese until mixed.  Thin with mayo to desired consistency.

If you find after chilling that it sets up too firm, you can thin it even more with mayo.
